Does it account for the bag itself?

No — only the dice. Add ~30 g for a typical drawstring bag.

Why does dice material change the weight?

Acrylic and resin dice are light, while metal dice can weigh several times more for the same size because of their density. Selecting the material lets the estimate use the right density for the volume.

What is in a standard 7-piece dice set?

A standard polyhedral set contains one each of the d4, d6, d8, d10, d12, d20, plus a percentile d10 marked in tens. That covers every die needed for most tabletop RPGs like Dungeons and Dragons.
